Taco Tuesday anyone?

Ingredients

Fish

10 oz. Orca Bay Flounder, thawed

1 tsp. kosher salt

½ tsp. Frontier Co-op onion powder

½ tsp. Frontier Co-op garlic powder

½ tsp. Frontier Co-op chili powder

½ tsp. freshly cracked black pepper

Pinch of Frontier Co-op cayenne

1 – 1 ½ C bulk cornmeal

Kosher salt and freshly crack pepper to taste

Slaw

2 C organic shredded cabbage, green, purple, or mixed

¼ C – ½ C roughly chopped cilantro

Juice from ½ organic lime

¼ tsp. kosher salt

Spicy Sour Cream Sauce

½ C Organic Valley sour cream

Juice from ½ organic lime

½ Tbsp Frontera Chipotle in Pepper Adobe sauce

¼ tsp. kosher salt

¼ tsp. Frontier Co-op smoked paprika

¼ tsp. Frontier Co-op chili powder

1/8 tsp. Frontier Co-op onion powder

1/8 tsp. Frontier Co-op garlic powder

Freshly cracked black pepper to taste

Assembly

4-6 Herradura Corn Tortillas

Optional garnishes: sliced radishes, pico de gallo, slices of lime, diced avocados

Preparation

Step 1

To make your sour cream sauce, add everything to a bowl, whisk to combine. If it is too spicy, add a bit more lime juice or honey. Taste and adjust as needed. Place in the fridge to keep cool.

Step 2

To make your slaw, add everything to a bowl, toss to combine. Place in the fridge to keep cool.

Step 3

To make your fish, add all of your seasonings into a small bowl and whisk to combine. Set aside.

Step 4

In a shallow bowl, add your cornmeal, salt, and pepper. Mix to combine.

Step 5

Preheat oven or air fryer to the correct temperature.
Bake in the oven at 400 for 10-12 minutes, checking halfway through and flipping over.
Fry in air fryer 375 degrees 6-7 minutes, flipping halfway through.

Step 6

Sprinkle some of your seasonings on both sides of the fish then coat in the cornmeal. Place on a baking sheet or plate if using the air fryer. Repeat process until all of your fish has been coated. Spritz with cooking spray and place in the oven or air fryer for the time listed.

Step 7

Remove from the oven or air fryer.

Step 8

Heat your tortillas either in a dry skillet over medium heat for 20-30 seconds per side. Wrap in a dish cloth to keep warm.

Step 9

To assemble your tacos, add a couple pieces of fish to the tortilla, top with your sour cream mixture, slaw, and optional garnishes.
