Ingredients

makes 2 large funnel cakes

2 C War Eagle all-purpose flour

2 Tbsp. Wholesome granulated sugar

1 tsp. Rumford Baking Powder baking powder

½ tsp. Frontier Co-op cinnamon

Pinch kosher salt

1 C Organic Valley whole milk

2 large Happy Co eggs, lightly whisked

1 tsp. Frontier Co-op vanilla

Wholesome powdered sugar for dusting

Spectrum Culinary Safflower Oil for frying

Organic fruit for topping

Preparation

Step 1

In a small bowl, whisk together your all-purpose flour, granulated sugar, baking powder, cinnamon, and salt. Set aside.

Step 2

In a medium bowl, add your milk, eggs, and vanilla, whisk to combine.

Step 3

Add your dry ingredients to your wet and mix until just combined.

Step 4

In a heavy bottomed pot, add 2-3 inches of oil and heat to 375.

Step 5

Drizzle batter from a cup with a spout, swirling around the pan and overlapping. Cook for 2 minutes, or until golden brown. Flip and cook for another 2 minutes or until golden brown.

Step 6

Remove and place on a paper towel lined plate to remove excess oil. Move to another plate, add fruit, and dust with powdered sugar.
